Because
we're a small, local, family farm, we don't have the ability to inventory unsold
cuts of meat, so we sell our animals as shares. The beef is typically divided into five or six shares, and lamb
into halves.
Here's what it looks like in
your freezer:
A sixth share of beef takes up about the same amount of space as the freezer compartment over a refrigerator, about two shelves of an upright freezer. A typical share weighs about 70 pounds and is comprised of about a third steaks (T-bone, ribeye, sirloin, tenderloin, flank, London broil, sandwich); a third ground beef; and the rest in roasts (top and bottom round, shoulder, chuck, rump, eye, bolar) andbraising cuts (short ribs, cubes, soup bones). A half share of lamb weighs around 25 pounds and includes chops, ground, shanks, and the leg, butterflied or whole. The price for beef is $4.00 per hanging pound, translating to about $5.50 per pound of finished weight for the whole order. A half share of lamb is $150. We cover all processing costs.
Ordering:
We know this is a little
old-fashioned, but we still take orders on paper. If you think you might be interested in buying our organically
raised, grassfed meat, please e-mail or telephone us with your snail mail address, and we'll send you an order form in October. If you ordered from us within the last two
years, we'll send you one automatically.
Otherwise, please let us know you'd like to be included. We don't share our mailing list with anyone.
The order form you mail back
to us will be batched with others from your area, and we'll schedule your
animal with Bringhurst Meats and
telephone you to set up delivery. We
sell to customers in New Jersey, Delaware, and eastern Pennsylvania. Generally speaking, the further away you are
from south Jersey, the earlier we'll schedule your winter delivery. We charge $20 for delivery to cover our
costs in getting your order to you.
Anyone who wants to pick up from Bringhurst is welcome to do so.

We
also sell honey and, occasionally, eggs, and can combine those with meat
deliveries for out-of-town customers—let us know if you're interested.
Farm visits:
We
love our customers, but we live at the end of half a mile of dirt road, in
a place that is remote, by New Jersey
standards. For most of the year there
are only the two of us running the farm, and we’re busier than one-armed
paperhangers. That means we wholesale
most of what the farm produces—no farmstand, no market, and no CSA. We also need to maintain what the state and
federal vets call “biosecurity” for our animals, by minimizing their exposure
to visitors. And because they don't
see a lot of bipeds, they're likely to walk away from humans they don't
know. But if you’re an existing
